Zupas Wisconsin Cauliflower Soup

This is my Favorite Soup at Zupas


4 T Butter
1 large Onion, chopped
1/2 C   Flour (i use whole wheat)
2 t Salt
2 t pepper
4 C Milk
6 C Water
10 Chicken Bouillon Cubes
3 Bags Frozen Cauliflower
2 t Dijon Mustard
2 C Cheddar Cheese, shredded
2 C Pepper Jack Cheese shredded
 Bacon for topping-optional

  1.  In a large stock pot saute onion in butter until soft and golden brown.
  2. Whisk in flour and salt pepper
  3. Gradually stir in milk, and water
  4. Add bouillon cubes and cauliflower
  5. Bring to a boil then reduce heat, cover and simmer for about 20 minutes or longer until cauliflower is tender
  6. In a blender, (with center, top part removed, so the steam can vent) blend soup at low speed in small batches until very smooth. I use my hand held Immersion Blender and it makes this step so much faster and Easier
  7. Return cauliflower mixture to pot and heat on medium until hot
  8. Stir in mustard and cheese, mix until cheese is melted and smooth
  9. Ladle into bowls and top with bacon. Eat Fast...it cools quickly
As you can image this makes a lot of soup, i will usually freeze half for another meal!
